Despite this status, Joseph Perrier remain a small and modest producer with a focus on consistency of quality. Their cellars in Châlons-en-Champagne were built in the 1820s before electric light, so natural sunlight was beamed underground using mirrors placed at the bottom of deep shafts and this system is in place to this day.
